I have never shared recipes on this blog before but I have decided to start. It’s fun to change things up a bit! I also wanted to share this recipe because it is great for making for others for any occasion. I have made this twice in one year now for some mommy friends and their new babies. I already know there will be more. It’s always a hit! It also freezes really well. I hope you enjoy!
Lasagna Roll Ups
Makes 6 to 8 servings
This recipe is really fun and tasty but also time consuming. You should allow yourself a decent amount of time to prepare and roll the noodles.
Ingredients
- 12 lasagna noodles (about 3/4 pound)
- 1/4 teaspoon salt
- 4 cups store bought marinara sauce or your favorite tomato sauce recipe
- 1 (15-ounce) container part-skim ricotta cheese
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1 egg, lightly beaten
- Freshly ground black pepper
- Pinch ground nutmeg
- 1/4 cup grated Parmesan
- 2/3 cup grated part-skim mozzarella cheese (more if you’d like to put cheese in the rollups)
Directions
Preheat the oven to 375 degrees F. Cook the noodles al dente according to the directions on the package. Drain them well and spread them out onto aluminum foil or waxed paper to prevent them from sticking. In a medium bowl combine the ricotta cheese, spinach, egg, the remaining 1/4 teaspoon salt, a few turns of pepper, and nutmeg.
Spread 1 cup of tomato sauce on the bottom of a 9 by 12-inch baking dish. Spread about 2 tablespoons of the ricotta mixture onto a lasagna noodle. Top with about 1 1/2 tablespoons of sauce (I also sprinkled some extra mozzarella cheese on there), roll the noodle and place it into the baking dish. Repeat with the remaining noodles. Spread the remaining 1 1/2 cups of sauce over the lasagna rolls.
Side note: I would have taken pictures of the rolling process but I had made to big of a mess!
Top with grated cheeses, cover loosely with foil, and bake for 45 minutes.
Uncover and bake for 15 minutes more. **If you are making this for someone else or are freezing it, do not bake right away.

This looks so delicious! I always have a problem with cutting the lasagna I make — it looks like rolling would make it much easier. I'm definitely going to try to make this recipe next time I make lasagna!
